摘　　要：建立简便快速的测定辣椒制品中10种工业染料的检测方法,以乙腈为提取溶剂,采用乙腈-0.1%甲酸水溶液的流动相体系和正负离子同时采集模式,用高效液相色谱-串联质谱联用(HPLC-MS/MS)法测定10种工业染料。结果表明,10种工业染料在各自的线性范围内呈现良好的线性关系,相关系数(R2)为0.9963~0.9999,检出限为1.0μg/kg^5.0μg/kg,加标回收率为71.4%~102.9%,相对标准偏差(RSD)小于10%。该方法简便灵敏,准确快速,可用于辣椒制品中10种工业染料的测定。To established a fast and accurate method for determination of 10 industrial dyes in foods.The samples were extracted by acetonitrile and determined by high performance liquid chromatography-tandem mass spectrometry （HPLC-MS/MS）,using acetonitrile-0.1％ formic acid mobile phase system and the positive-negative ions simultaneous acquisition mode.The calibration curve of these ten compounds showed a good linearity in their respective range.The correlation coefficients were between 0.9963～0.9999,the limits of detection（LODS） of the method were between 1.0μg/kg～5.0μg/kg,the average recovery rates were between 71.4％～102.9％,and the relative standard deviations（RSD） of the method were lower than 10％.The method was sensitive and accurate and it could be used for the detection of illegal added industrial dyes in the pepper products.
