摘 要:目的掌握食源性致病菌的污染状况,及时发现食品安全隐患。方法参照2012年食源性致病菌监测工作手册进行。结果 10类389份样品中,共检出食源性致病菌76份,食源性致病菌总检出率为19.54%,沙门菌在生禽肉、动物性水产品检出率较高,分别为16.13%、3.45%;单增李斯特菌主要在生畜肉中检出,检出率为4.76%;副溶血性弧菌在动物性水产品和生食类蔬菜都有检出,检出率分别为20.69%和2.22%。肠出血性大肠杆菌O157:H7仅在生畜肉中检出,检出率为2.38%,大肠菌群不合格率为21.9%,其中以熟肉制品不合格率最高,达32.14%,其次为糕点类、豆制品、生食类蔬菜、果汁。结论 2012年广州市越秀区食源性食品污染情况仍然较为严重。Objective To understand the pollution status of food - borne pathogens, so as to timely find the food safety risk. Methods The food - borne pathogens monitoring was carried out according to the Handbook of food - borne pathogens monito- ring in 2012. Results In 389 samples of 10 kinds, food - borne pathogenic bacteria were detected in 76 samples, the total detection rate was 19.54%. Salmonella was frequently detected in raw poultry and aquatic animal products, the detection rates were 16.13% and 3.45% respectively. Listeria monocytogenes was mainly detected in raw meat, and the rate was 4.76% ; Vibrio parahaemolyticus in aquatic animal products and fresh vegetables are detected, and the detection rates were 20.69% and 2.22% respectively. Enterohemorrhagic Escherichia 0157:1-17 coli were detected only in the raw meat, and the detection rate was 2.38%. The total unqualified rate of coliform was 21.9%, highest in cooked meat products(32.14% ), followed by pas- try, bean product, raw vegetables and fruit juice. Conclusion The food contamination status is still serious in Yuexiu district of Guangzhou city in 2012.
