摘 要:目的调查了解双流国际机场餐饮企业自制食用冰块的卫生状况,为国境口岸食源性疾病防控工作提供科学依据。方法抽查双流国际机场19家餐饮企业的自制食用冰块37份,按GB 2759.1-2003《冷冻饮品卫生标准》进行检验和评价。结果抽查的37份食用冰块中,合格样本16份,合格率为43.24%。不合格样本为菌落总数和大肠菌群超标。全部样本未检出沙门菌、志贺菌和金黄色葡萄球菌等致病菌。从其中3份样本中分别分离到3株细菌,经鉴定为铜绿假单胞菌、阪崎肠杆菌和肺炎克雷伯菌。结论双流国际机场食用冰块的卫生状况不容乐观,条件致病菌是食源性疾病发生的一大隐患,今后应加强卫生监督管理。Objective To investigate the hygienic quality of edible ice at Shuangliu International Airport, and to provide the basis for prevention and control of food borne disease. Methods A total of 37 samples from 19 catering enterprises at Shuangliu Airport were randomly collected, tested, and evaluated according to GB 2759.1-2003 Hygienic standard for frozen drinks. Results Only 16 (43.24%) samples were qualified. The main reason of unqualified was exceeding the standard limit of aerobic bacterial count and Coliform bacteria. Salmonella, Shigella, and Staphylococcus aureus were not detected in all samples. Three bacteria were isolated from 3 samples respectively, and identified as Pseudomonas aeruginosa, Cronobacter malonaticus, and KlebsieUa pneumoniae using bioMerieux ATB ID 32E test strip and 16S rRNA gene sequence analysis. Conclusion The hygienic situation of edible ice at Shuangliu International Airport was not optimistic. The opportunistic pathogens were the potential risk of food borne disease. Sanitary supervision and management should be strengthened.
