山药花生黑米复合保健饮料的工艺研究

摘　　要：以山药、花生和黑米为主要原料,对其复合饮料的工艺进行了研究。试验结果表明山药花生黑米饮料的最佳配方为山药汁添加体积为40 mL,花生汁添加体积为20 mL,黑米汁添加体积为20 mL,水添加体积为80 mL,白砂糖添加质量分数为6%,柠檬酸添加质量分数为0.08%,此时感官得分为86.7分;将山药、花生和黑米进行复配制成的复合型保健饮料口味独特、营养丰富,风味良好。The process of production ot compound health Deverage of yam, peanut anta DlaCK rice were stua^ea m mls paper. The result was showed that the best prescription of compound health beverage of yam, peanut and black rice was adding content of yam juice is 40 mL, adding content of peanut juice is 20 mL, adding content of black rice juice is 20 mL, adding content of water 80 mL, adding content of sugar 6% and adding content of citric acid 0.08%. The sensory score was 86.7. The compound beverage prepared in this optimal condition exhibited a unique taste, plentiful nutrition components and excellent flavor.
