摘 要:为六须鲶种质资源的开发利用提供科学依据,对六须鲶含肉率及肌肉营养成分进行了测定。结果表明:六须鲶含肉率为68.76%;肌肉中水分、粗蛋白、粗脂肪和灰分含量分别为75.67%、17.89%、5.20%和1.10%;肌肉中17种常见氨基酸(除色氨酸)总含量(占肌肉干重)为79.07%。其中,必需氨基酸含量为36.51%,占氨基酸总量的46.17%;必需氨基酸与非必需氨基酸含量的比值为85.78%;鲜味氨基酸含量为29.70%,占氨基酸总量的37.56%。必需氨基酸指数(以WHO/FAO标准为参照)为86.60。异亮氨酸为第一限制性氨基酸,颉氨酸为第二限制性氨基酸。六须鲶营养丰富、具有良好的口感和风味品质,是适合推广养殖的淡水经济鱼类。The content of flesh in body and nutrient composition of Silurus soldatovi were determined to provide scientific basis for the S.soldatovi resources development and utilization.The results showed flesh rate was 68.76 %,and contents of moisture,crude protein,crude fat and ash were 75.67 %,17.89 %,5.20 % and 1.10 %,respectively.The total mount of 17 kinds of amino acids (except tryptophan) was 79.07 % (dry matter),with esaential amino acids of 36.51%,accounting for 46.17 % in total amino acids.The essential amino acids and non-essential amino acid content rate was 85.78 %.The content of tasty amino acids was 29.70 %,accounting for 37.56 % in total amino acids.The essential amino acid index (WHO/FAO standards as a reference) was 86.60.Isoleucine was the first limiting amino acid,and valine was the second limiting amino acid.The results illustrated that S.soldatovi had rich nutrients with good taste and flavor quality,so it was suitable for extension as economic freshwater fish.
