摘  要:研究了硬粒小麦新品种硬麦八号的主要组成部位(麸皮、麦胚、胚乳)中四种主要蛋白质(清蛋白、球蛋白、谷蛋白、醇溶蛋白)以及营养矿物质元素(Ca、Fe、Mg、Na、K、Zn、Cu、Se)的含量。结果表明,麦胚中总蛋白质含量较高,胚乳中谷蛋白含量最高,而各部位醇溶蛋白含量都很低。采用原子吸收光谱法和原子荧光光谱法对其中营养矿物质元素分别进行测定,发现K、Zn、Cu这三种元素在麦胚中的含量远远高于麸皮和胚乳,Fe、Mg、Na三种元素在麦胚中的含量远高于胚乳,与麸皮相当。由此可知,硬麦八号的胚部营养物质丰富,应引起重视并加以开发利用。The four major protein content(albumin, globulin, glutenin, gliadin) and nutrition and mineral elements (Ca, Fe, Mg, Na, K, Zn, Cu, Se) in the main parts(bran, embryo, endosperm) of durum wheat Ⅷ were studied. The results showed that the total protein content in germ was the highest, the glutelin content in endosperm was the highest, and gliadin content in various parts of durum wheat was very low. The nutrition and mineral elements were determined by atomic absorption spectros- copy and atomic fluorescence spectroscopy. The content of K, Zn and Cu in germ was much higher than that in bran and endosperm; the content of Fe, Mg, Na in germ and bran were much higher than that in endosperm. Therefore, durum wheat Ⅷ embryo is nutritious, and we should pay more attention to its utilization.
