摘  要:[目的]分析存在呋喃药物残留风险的出口水产品,确定其中呋喃残留状况及相对严重程度。[方法]应用层次分析法食品安全预警理论,建立数学模型对汕头出口水产品中呋喃残留进行风险评价。[结果]综合考虑检出率和检出构成比,存在呋喃药物残留风险的四种出口水产品中,罗非鱼风险程度最大,其权值将近0.5;其次南美白对虾,权值在0.254;然后是金鲳鱼,权值是0.165;牛蛙腿最小,权值在0.083。[结论]该数学模型可以综合多个评判指标,对出口风险相对严重程度做出比较全面的评价,有利于实施合适的风险监管措施。The existing risk of nitrofuran metabolite residue in aquatic products for export Was analyzed, and the residual status of nitrofuran metabolite and its relative risk were evaluated. With the Analytic Hierarchy Process theory of early warning on food security, a mathematical model was established to evaluate the risk of nitrofuran metabolite residue in aquatic products for export in shantou. Taking the detection rate and the detection constituent percentage into full consideration, among the ten types of aquatic products for export with the risk of nitrofuran metabolites residues, the tilapia fish had the greatest risk with their weight values being about 0.5; Penaeus vannamei was with a weight value of 0.254; golden pompano, 0.165; while Bullfrog leg had the relatively least risk with a weight value of 0.083. This mathematic model can integrate a number of evaluation indices, and evaluate the relative seriousness of risks in export comprehensively, which contributes to the implementation of appropriate risk surveillance measures.
