摘  要:采用清蒸建窖、分窖建窖和丢糟建窖3种不同的方法对掉排窖池进行处理,以达到稳定窖池环境,提高基酒产量和质量的效果。结果表明,3种处理方法都能提高基酒的产量和质量,使掉排窖池达到正常窖池的生产水平。The pits with decrease of liquor yield were treated by three different methods respectively including pit construction by steamed dis tiller's grains, pit construction respectivily, and pit construction by distiller's grains. Afterwards, the stabilization of pit environment, the increase of base liquor yield, and the improvement of base liquor quality were investigated. The results showed that all three methods could improve the yield and the quality of base liquor and recover the pits with decrease of liquor yield the same as normal pits.
