摘  要:目的了解和掌握厦门市个体榨油作坊现榨花生油和餐饮小吃店食用植物油的安全水平和污染程度。方法对35家个体榨油作坊和60家餐饮小吃店卫生情况进行现场调查并随机抽样检测植物油。按照GB/T 5009检测酸价、过氧化值、黄曲霉毒素B1、总砷、铅和苯并(α)芘等项目。依据GB 2716-2005进行评价。结果共检测食用油150份,总合格率为76.67%。个体榨油作坊花生油的合格率为66.00%,不合格原因主要是黄曲霉毒素B1、铅和苯并(α)芘超过了GB 2716-2005规定的限量值;餐饮小吃店烹调用食用油的合格率为82.00%,不合格产品主要集中在散装无标识食用油中,酸价和过氧化值的合格率相对较低。结论相关部门应加强对现榨花生油和餐饮小吃店烹调用食用油的监测和监督管理,严禁使用无产品标识和质量保证的散装油,加大处罚力度,确保市民身体健康和食品安全。Objective To understand the security level and pollution status of peanut oil in individual oil - pressing workshops and the edible vegetable oil used by snack bar in Xiamen. Methods Thirty -five individual peanut oil extraction workshops and 60 snack bars were involved for field hygiene investigation, and oil samples were randomly collected to test and evaluate the acid value, peroxide value, AFBl , total As, Pb and benzo[ α] pyrene according to GB/TS009 and GB2716 -2005 respectively. Results The total qualified rate of 150 edible vegetable oil samples was 76.67%. The qualified rate of peanut oil produced by private oil extraction workshop was 66.00%, and the unqualified factors were AFB1 , Pb and benzol α] pyrene, whose contents exceeded the limiting value of GB2716 -2005. The qualified rate of cooking oil from catering snack bar was 82.00%, and the unqualified samples were mainly from bulk edible oil without identification, with low qualified rates of acid value and peroxide value. Conclusion The peanuts oil produced by the private oil extraction workshops and cooking oil from catering snack bar should be strengthened monotroing and management to ensure the public health and food safety, such as banning bulk edible oils without identification and quality assurance and intensifying the punishment.
