摘  要:武夷水仙是武夷岩茶最重要的生产茶树品种之一,传统上根据武夷山地区微域自然环境的不同将其产区分为"名岩"和"丹岩"。通过对2个产区武夷水仙茶品质组分和矿物质元素分析测定及差异显著性检验,运用多元数字化指纹图谱技术构建产地判别模型。结果显示:"名岩"和"丹岩"产区的武夷水仙茶叶中Ni、Ba和Mn存在极显著(p<0.01)差异;Cr、K和Cd存在显著(p<0.05)差异;茶多酚、咖啡因、粗纤维、氨基酸总量、茶黄素、茶红素、茶褐素、18种氨基酸组分、11种茶多酚组分、F、Fe、Ca、Mg、Al、P、Cu、Zn、Sn、Pb、Na、Mo、Co和As的差异不显著(p<0.05)。以Pearson卡方系数大于0.95为筛选依据,从57个试验变量中选择Mn、Ni、Cd、Ba和Cr这5个变量作为产地判别模型构建的特征变量,有效避免了模型的"过度拟合问题",该判别模型的识别正确率达88.24%。该结果也说明矿物质元素指纹图谱适合于武夷水仙茶叶产地的判别研究。Wuyi Shuixian Tea (Camellia sinensis L. cv. Wuyi Shuixian) is an important tea variety for Wuyi Rock essence tea. Based on the different micro eco-enviroment, there are two kinds of production areas, named famous arears and normal areas. In this article, the quality compounds were compared between these two areas production. The results showed that there were extremely significant difference (p〈0.01) in Ni, Ba, Mn, significant difference (p〈0.05) in Cr, K and Cd, but no obvious difference (p〉0.05) in tea polyphenols, caffeine, crude fiber, total amino acids, theaflavins, thearubigins, theabrownin, amino acids composition, tea polyphenols composition, F, Fe, Ca, Mg, A1, P, Cu, Zu, Sn, Pb, Na, Mo, Co, and As. The multiple fingerprints were applied to establish discriminal model. Mn, Ni, Cd, Ba and Cr were involved in the model, for their Pearson chi square conefficient greater than 0.95. The accuracy of geographical tracing prediction model was 88.24%. The results also indicated that mineral fingerprints were suitable for geographical tracing of Wuyi Shuixian tea.
