摘 要:为建立一种快速测定食品中痕量丙烯酰胺的灵敏准确、快速简便的新方法,以市售食品为样品,丙烯酰胺经提取后,利用其对鲁米诺-高锰酸钾化学发光体系的抑制作用,测定样品中的丙烯酰胺,并对体系的测定条件进行了优化。结果表明:丙烯酰胺测定的线性范围为1.0×10-10~1.0×10-4mol/L,相关系数r为0.9993,方法检出限为3.40×10-13mol/L,加标回收率为85.7%~98.2%,样品平行测定的相对标准偏差RSD为2.4%(n=9)。与气相色谱法对照测定,通过F检验和t检验表明,两种方法之间不存在显著性差异,结论的置信度为95%。该分析体系线性范围宽,灵敏度高,易实现自动化。具有简便快捷、成本低廉、实用性强、易于现场检测等优点,可用于食品中丙烯酰胺的测定。In order to establish a new rapid, accurate and simple method which was aimed to determinethe trace acrylamide in foods, take commercially available foodstuff as samples, the acrylamide was ex-tracted from the samples. The extracted acrylamide from samples was determined by using its inhibition toluminol- potassium permanganate chemiluminescence system and the condition was optimized. The re-sults showed that the linear ranges of this determination was from 1.0 x 10-10 to 1.0 x 10-4 tool/L, thecorrelation coefficient was 0. 999 3, the detection limit was 3.40 x 10 -13 mol/L. Recoveries were be-tween 85.7% and 98.2%. The relative standard deviation was 2.4% (n = 9). Compared to the teststaken by gas chromatography, there was no significant difference between the two methods after the F -test and t - test, with the confidence level of 95 %. The method was easily to be automated because of thewide linear ranges and high sensitive. It was convenient, cheap and practicable and easy for site testing.It is suitable for determination of acrylamide in foods.
