摘  要:高丝氨酸酰基内酯类化合物AHLs是与食品腐败最为密切相关的信号分子,本研究通过感官评定、两种传感菌紫色杆菌CV026和根癌农杆菌NTL4(pZLR4)结合薄层层析法(TLC-biosensor)检测AHLs以及LC-MS/MS法检测AHLs对冰鲜鲈鱼样品的腐败状况进行监测,对货架期进行预测。结果表明,感官评定、TLC-biosensor检测AHLs法、LC-MS/MS检测AHLs法分别在鲈鱼冷藏第7天、第7天和第5天检测到腐败,即达到货架期终点;AHLs信号分子浓度与腐败菌数量密切相关,当腐败菌数量达到106CFU时,即可检测到AHLs。通过LC-MS/MS法和TLC-biosensor法检测AHLs对水产品腐败进行监测效果良好,对于一些达不到感官鉴别条件的腐败产品可以及时剔除,从而更加准确的预测食品货架期。N-acyl-homoserine lactones (AHLs) are the signals most closely connected with food spoilage. Three methods were used for monitoring ice fresh perch spoilage and predicting shelf life ,include organoleptic investigation,detecting AHLs by TLC-biosensor (two biosensor-chromabacterium biolaceum CV026 and agrobacterium tumefaciens NTL4 (pZLR4))and detecting AHLs by LC-MS/MS. Spoilage was found (i.e. reached shelf life) through organoleptic investigation, TLC-biosensor and LC-MS/MS when refrigerated the 7th day, the 7th day and the 5th day separately. The results also demonstrated that AHLs concentrations were closely related to the number of spoilage organisms. AHLs could be detected only if the spoilage organisms up to 106cfu.The method detecting AHLs using TLC-biosensor or LC-MS/MS had good effects on monitoring of foodstuffs dynamicly,which could eliminate spoilage products not up to organoleptic investigation condition timely, and then predict shelf life more accurate.
