摘 要:甲醛被世界卫生组织确定为致癌、致畸物质和公认的变态反应源。为了查明丁鱼及其鱼丸制品中天然甲醛的含量水平及其对人体的健康风险,研究了丁鱼及其鱼丸制品的甲醛天然含量,参照CAC的方法对其进行健康风险评估。结果显示,丁鱼甲醛天然含量的平均值为114.56 mg/kg,其鱼丸制品甲醛天然含量的平均值为25.80 mg/kg,急性膳食暴露和慢性膳食暴露均小于相关标准。因此,丁鱼中存在的天然甲醛不会对人体健康造成目前科学水平能检测到的损害。It was alfimaed that form aldehyde was carcinogen, teratogen and could cause allergic reaction in human by WHO. Thenatural contents of form aldehyde in lizard fish and products made of it were surveyed, and a risk assessment on it by the method ofCAC was conducted. The results showed that the average content of form aldehyde in lizard fish and products made of it which weredetected were 114.56 mg/kg and 25.80 mg/kg, respectively. Acute dietary exposure risk assessment and chronic dietary exposure riskassessment were both accorded with the interrelated criterion. The lizard fish and products made of it were basically safe.
