摘  要:采用常规方法对云南东部地区特色野菜——面蒿(Gnaphalium hypoleucun D.C.)中蛋白质、粗纤维、矿物质元素、氨基酸等营养成分的含量进行测定。经检测,面蒿中水分含量为72.1%,灰分含量为7.1%,蛋白质含量为3.19%,粗脂肪含量为0.45%,粗纤维含量为28.9%,含有多种矿物质元素,其中以K,Ca含量较高,含有15种氨基酸,总量达13.24%,以谷氨酸含量最高。结果表明,面蒿中含有丰富的蛋白质、脂肪、粗纤维、矿质元素及氨基酸,具有很高的开发利用价值。By employing conventional methods, the nutrient components such as protein, crude fiber, mineral elements, aminoacids etc. in Gnaphalium hypoleucun D. C. were analyzed comparatively. After testing, the moisture content was 72.1%, theash content was 7.1%, the protein content was 3.19%, the crude fat content was 0.45% and the crude fiber content was 28.9%.In addition, Gnaphalium hypoleucun D. C contains many kinds of mineral elements, of which K and Ca content was higher,and contains 15 kinds of amino acid, total content of 13.24%, with the highest content of glutamic acid. The results show thatGnaphalium hypoleucun D. C is rich in protein, crude fiber, mineral elements and amino acids, which is endowed with higherexploring value.
