摘 要:目的评估基于柠檬烯鉴别地沟油与食用植物油的有效性。方法收集食用植物原油10份,煎炸废弃油脂24份,餐厨废弃油脂36份,市售食用植物油71份,加香精市的售食用油17份和自制地沟油精炼油11份、花椒油3份,分别检测各样品中柠檬烯含量,按样品类别对上述样品中的柠檬烯检测结果进行配对统计学分析。结果柠檬烯指标检测灵敏度高,判定餐厨废弃油脂有效性较高,准确率达97.2%,其次是检验地沟油精炼油,准确率达63.6%。结论柠檬烯在烹饪过程中作为花椒、八角调料添加引入的成分,在油脂中得以保留下来,并在精炼过程中不能完全被去除,配合其他地沟油鉴定指标可有效鉴别地沟油与食用植物油。Objective To evaluate the effectiveness of limonene to discriminate hogwash oil from edible vegetable oil. Methods Ten crude vegetable oils samples, 24 fried waste oils samples, 36 kitchen -wast oils samples, 71 edible vegetable oils samples, 17 edible vegetable oils samples containing flavor, 11 refined hogwash oils samples and 3 pepper oils samples were collected to detect the content of limonene. Then the detection results of the above samples were statistically tested based on sample category to assess the effectiveness of limonene in distinguishing hogwash oils from edible vegetable oils. Results Limonene showed high detection sensitivity and high effectiveness in distinguishment of kitchen - waste oils samples from edible vegetable oil cor- rectly. The accurate rate was 97.2% , followed by refined hogwash oil, 63.6%. Conclusion As additive ingredient of pepper and star anise used in cooking, limonene can be retained in the refining process and hardly removed completely, so it can be used to effectively identify hogwash oils and edible vegetable oils in combination with other identification indicators.
