摘 要:目的了解厦门市食源性病原菌监测情况,确定可能污染病原菌的高风险食品种类和来源等,为食源性致疾病的风险评估和控制提供科学依据。方法按照《国家食品安全风险监测计划》和《福建省食品微生物及其致病因子监测计划》的监测要求和检验方法,采集和检测各类食品样本,监测数据以Microsoft Excel整理分析。结果2006-2012年从1 022份样品中检出致菌菌118株,平均检出率为11.5%,婴幼儿食品中的阪崎肠杆菌、生肉中的沙门氏菌、水产品中的副溶血性弧菌检出率分别是23.5%,11.1%和8.84%,是本市食源性致病菌风险来源的主要食品品种和项目。乳制品、鲜榨果汁、沙拉、蛋制品、调味酱、焙烤食品和生食果蔬等食品均未检出致病菌。结论我市食品存在着安全隐患,应加强食品安全宣传教育工作,建立有效的监督机制,最大限度地降低食品的污染程度。Objective To understand the contamination situation of foodborne pathogens and identify the high- polluted-risk foods and as to provide the scientific basis for controlling food-borne pathogen. Methods According the requirements of the national food safety risk monitoring plan and food microbiology and pathogenic factor monitoring plan in Fujian, collected and detected the foodborne pathogenic bacteria, analyzed monitoring data based on Microsoft Excel. Results 118 bacteria were isolated from the 1 022samples, the average positive rate was 11.5%. In addition, Enterobacter sakazakii in infants' food(23.5%), Salmonella in raw meat(11.1%), Vibrio parahaemolyticus in seafood(8.84%) were the main pathogenic bacteria combinations which may cause food-borne diseases, and milk products, fruit and vegetable juice, salad., egg products, spice, bakery food, raw fruits and vegetables were not found with pathogenic bacteria from 2006 to 2012. Conclusion Some food exist safety problems in Xiamen city, measures such as supervision mechanism, food safety propaganda and education, should be taken continuely and ameliorated in more effective ways for the performance of control system.
