摘 要:目的了解绵阳市各类食品中食源性致病菌的污染状况,寻找可能引起食源性疾病的高危食品,为控制和降低食源性疾病提供依据。方法按照国家标准方法和全国食源性疾病监测手册,对8种食源性致病菌进行分离与鉴定。结果共抽检食品样品582件,检出致病菌49株,总检出率为8.42%。其中蜡样芽孢杆菌26株,单核细胞增生李斯特菌8株,阪崎肠杆菌4株,铜绿假单胞菌4株,沙门菌4株,金黄色葡萄球菌3株。结论 2012—2013年绵阳市乳及乳制品和婴幼儿食品的致病菌检出率较高,蜡样芽孢杆菌、单核细胞增生李斯特菌的污染较为严重,对此应引起重视。[ Objective] To learn the contamination status of food-borne pathogens in various food in Mianyang city, find the high- risk food which may cause foodborne disease, provide basis for control and reducing the foodborne diseases. [ Methods ] According to the national standard method and the food-borne pathogen detection manual, eight categories of foodborne pathogens were separated and identified. [ Results ] 582 samples were detected, 49 strains of pathogenic bacteria in them were detected, the overall detection rate was 8.42%. Among that, the Bacillus cereus, Listeria monocytogenes, Enterobacter sakazakii, Pseudomonas aeruginosa, Salmonella and Staphylococcus anreus were 26, 8, 4, 4, 4 and 3 strains, respectively. [ Conclusion ] The detection rate of pathogen in milk and dairy products and infant food is higher, and the main contamination of pathogenic bacteria in food are Bacillus cereus and Listeria monocytogenes, we should pay more attention to them.
