摘　　要：植物甾醇作为一种天然活性物质,安全性极高。近年来,植物甾醇被广泛应用于食品、乳品、医药、化妆品、饲料等行业,具有广阔的研究及应用前景。本文介绍了植物甾醇的生理功能及其应用进展,并对植物甾醇的检测方法进行了简述。As a natural active substance, plant sterol has high security. In recent years, plant sterol has been widely applied in food, dairy, medical science, cosmetics, animal food and so on. It has a broad research and application prospects. This paper reviews the advancement of study on physiological function and application of plant sterol. Accordingly, it also introduces the detection method of plant sterol.
