摘  要:两种分子量的壳聚糖配合和添加助剂涂膜 ,处理采后草莓果实。结果表明 :贮藏草莓失水率、腐烂率和发霉率显著减少 (P <0 .0 1) ;可溶性固形物、可溶性糖、可溶性蛋白质和Vc等含量以及糖酸比的降低幅度变小 (P <0 .0 5) ;果实CO2 和乙烯释放量减少 ,SOD活性提高 ,细胞膜透性变小 ,MDA含量降低 ,与对照相比均达到显著水平 (P <0 .0 1)。壳聚糖添加助剂涂膜处理 。The effects of chitosan coating on strawberry were studied under normal temperature storage with appending of auxiliary agent. The results showed that the rate of water loss,decomposition and mildew infection of strawberry decreased remarkably ( P <0.01); the content of soluble solid substance,soluble sugar,soluble protein and Vc of strawberry increased markedly,and the proportion of sugar and acid improved observably ( P <0 05); the released quantity of CO 2 and ethylene reduced obviously,the activity of SOD enzyme enhanced,the penetrability of cell membrane diminished,and the content of MDA cut down remarkably ( P <0.01),when it was coated with chitosan which was mixed with molecular weight of 1 700 and 30 000. These qualities of strawberry which was coated with chitosan were enhanced with appending of auxiliary agent considerably.
