摘　　要：本文综述了烷基吡嗪类香料的合成方法，提出适于工业化生产的合成路线。并对此类香料的可应用种类及其香型做了阐述。In this paper, the methods of the preparation of alkylpyrazine compounds as flavors are reviewed in detail. Some methods that can be used in the industry are shown. The odor characteristics of this kind of compounds are also described.
