摘　　要：江苏名菜是我国著名地方名菜之一，“江苏名菜”课程也是扬州大学烹饪专业必修课程之一。对江苏名菜的品种类型、刀工成形、烹调方法、滋味类型、菜肴色彩、质地口感进行量化分析与统计，既能比较客观地总结出江苏名菜的总体特征，又能对江苏名菜课程的实践教学起到参考作用。Jiangsu Famous Dish is one of the local dishes in our country topic of 'Jiangsu Famous Dish', one of the required courses for cuisine major students of our college. A quantification analysis and statistics of species, cutting forming, cooking methods, smell sorts, dish color, tastes of Jiangsu Famous Dish can not only summarise the overall feature of it objectively, but also supply a feference function for teaching of Jiangsu Famous Dish Course.
