摘  要:用深层发酵法进行鸡腿蘑液体菌种的生产 ,从 5个鸡腿蘑品种中 ,确定了一株适于深层发酵的菌株—瑞 10 该菌株较适宜的液体培养基组分为 :4%玉米粉 ,2 %蔗糖 ,2 %麸皮 ,0 1%KH2 PO4 ,0 0 5 %MgSO4 ·7H2 O 适宜的摇瓶条件为 :培养基的起始pH值为 7,2 5 0mL摇瓶装液量为 40mL ,接种量为 10 % ,培养温度 2 5℃ 15L发酵罐控制参数为 :装料系数 0 7,接种量10 % ,通气量 :1∶0 5~ 1 2 ,搅拌速度为 12 0~ 180r·min-1 用液体菌种进行鸡腿蘑栽培试验结果显示 ,深层发酵法生产鸡腿蘑比传统栽培方式生产周期可缩短 6 0d ,抗杂性能优于传统生产方式 。A strain suitable for submeraged fermentation was selected from five strains of Coprinus comatus .The strain’s suitable composition of fermentation medium was as follows:4% maize powder,2% sugar,2% wheat bran, 0.1% KH 2PO 4,0.05% MgSO 4·7H 2O.The optimal shaking culture conditions were as follows:pH7,40 mL medium in size 250mL flask,inoculation 10%,temperature 25℃.Fermentation process controls were as follows:operational volume factor 0.7,inoculation 10%,gas through puts 1∶0 5~1.2,mixing rate 120~180 r·min -1 .The Coprinus comatus cultivation with liguid inoculum showed the production period was reduced by 60 days and the resistance to contamination was better than that produced in the traditional way,and thre wasn’t significant difference in the productivity between the two ways.
