浓醪酒精发酵酵母菌的选育

摘　　要：以本研究室保藏酵母菌 Y316作为出发菌株 ,经紫外线诱变处理原生质体 ,再生菌通过初筛 ,复筛 ,选育出酒精高产菌株 Y316 - 2 3,在料水比 1∶ 1.8,发酵 6 0 h的条件下 ,成熟醪酒精的体积分数可达 13.5The yeast strain Y316 reserved by our department was used as original strain.We treated protoplasts with U.V.Throught primary and precise selecting regenerated strains,a mutated strain Y316 23 with high alcohol yield was selected.Under the condition that the ratio of material and water is 1∶1.8,and fermentation time is 60 hours,the alcohol yield is over 13.5 %.
