摘  要:采用研究居民历年食物消费和膳食营养评价的方法,发现农村地区营养问题是蛋白质量少质差、低脂肪、维生素及铁利用吸收率低,钙、锌、核黄素明显不足,营养结构负平衡、贫血率高。提出本地区食物改革战略目标是坚持从植物性食物为主,增加豆类和动物性食物、粮菜多样化,提高营养素吸收利用率,并对实施目标做了论述。Investigation of resident food consumption and evaluation of their dietary nutrition were conducted in poverty area to lead to food composition adjustment.The results showed that the main nutritive problems in the area were low protein and fat diet,low absorption rate of the inorganic salt and vitamin,negative balance of nutritive construction and higher anaemia incidence.We suggested that effort should be made to increase bean and animal food on basis of vegetable diet and to improve nutritive elements utilization.Measures to realize these goals are also discussed in this paper.
