摘　　要：大豆皂甙由皂甙元和低聚糖构成 ,由于组成大豆皂甙的皂甙元和低聚糖的种类不同 ,大豆皂甙具有多种生物学和药学性质 ,被广泛应用于食品、医药、化妆品和饲料等行业中 ,开发大豆皂甙具有广阔的前景。本文就大豆皂甙的来源、分布、结构、性质进行综述。Soyasaponins have been known to contain an aglycone(sapogenol),linked to one or more sugars or oligosaccharide moieties.As the aglycone and the oligosaccharide moieties are different,soyasaponins show different physiological and pharmacological properties,and soyasaponins have been applied for foods and foodstuffs.Here we focus on the origin,the distribution,the chemical structure and the content of soyasaponins in current studies.
