摘  要:老化窖泥与优质老窖的土壤成分最大差异在于窖泥中铁元素的存在形态 ,而窖泥氧化还原电位(Eh值)是决定窖泥中铁元素存在形态的关键因素。自然黄土处于氧化状态(Eh>400mv) ,铁以高价难溶化合物形式存在 ;老窖形成之前的窖池窖泥处于中度还原状态(Eh:0~200mv) ,三价铁大量还原 ,在有乳酸等有机酸的参与下 ,可能出现窖泥老化 ;若Eh<0mv,窖泥处于强度还原状态 ,窖泥中高价硫还原成H2S ,并与Fe2 + 反应生成难溶化合物FeS ,Fe2 + 毒害消除 ,老窖形成。同时剖析了影响窖泥Eh值的因素。The existential conformation of ferrum element in pit mud is the biggest discrepancy between aging pit mud and soil components of quality aged pits. Furthermore, the reduction oxidation potential of pit mud (Eh value) is the key factor of the existential conformation of ferrum element. The natural loess is in the state of oxidation (Eh>400mv), so the existential conformation of ferrum presents in high valence infusible compound. The pit mud before the formation of aged pits is in the moderate state of reduction (Eh:0~200mv) and the deoxidization of large amount of ferric iron coupled with organic acids such as lactic acid could result in pit mud aging. If Eh value is less than 0mv, the pit mud is in the strongest state of deoxidization and the high valence sulfur is deoxidized into H 2S and then reacted with Fe2+ into FeS and the elimination of Fe2+ resulted in the formation of aged pits. Meanwhile, the factors influencing the Eh values are also analyzed in this paper. (Tran.by YUE Yang)
