摘  要:研究了纸片法在检测酱卤肉制品中大肠菌群的应用 ,并与常规发酵法作对照 ,同时还进行了纸片的特异性和敏感性试验。结果表明 ,接种样品于自制的纸片上 ,在 (36± 1)℃下培养 15~ 18h ,就可以判定结果。纸片具有较强的特异性和敏感性 ,以MPN值比较 ,两法总符合率达 94 5 %。经统计分析 ,其差异无显著性意义 (P >0 0 5 )。The study on petrifilm detection of coliforms in pot stewed meat was conducted As compared with national standards, the results of the experiment on the specificity and the sensitivity of petrifilm showed: samples were inoculated in the petrifilm made by oneself and cultured for 15~18?h in (36+1)℃ could be determined The paper quality was specific and sensitive very much The positive conformance rate of two methods as compared with MPN was 94 5% The difference didn't achieve the remarkable level (P>0 05) by the statistics tests
