摘  要:目的了解天津市市售植物油受黄曲霉毒素B1(AFB1)及玉米赤霉烯酮(ZEN)的污染状况。方法用酶联免疫吸附测定法(ELISA)和液相色谱质谱联用法对天津市内采集的100份植物油样品中AFB1及ZEN含量进行检测。结果100份植物油样品中,AFB1的检出率为23.00%,最高含量为34.81μg/kg,检出于花生油中;花生油及芝麻油受AFB1污染最为严重,分别达到了36.00%和28.57%,其次是核桃油、橄榄油,分别为25.00%和20.00%。ZEN检出率为53.00%,其中最高含量为384.89μg/kg,检出于菜籽油中;除亚麻籽油及茶籽油外,其余植物油均有检出ZEN,其中菜籽油、玉米油、大豆油、花生油、核桃油、芝麻油污染较为严重,检出率达50%以上。天津市内六区的AFB1的检出率明显低于环城四区。散装花生油的AFB1污染率以及含量明显高于桶装花生油,而散装油和桶装油的ZEN差别不是很大。结论本次天津油样调查提示,天津市食用植物油中真菌毒素污染比较普遍,还需加快开发检测技术、建立全国统一检测机制以及加强农贸市场植物油的监管。[Objective]To investigate the contamination of aflatoxin B1 (AFB1) and zearalenone (ZEN) in commercially available vegetable in Tianjin. [Methods]The contents of AFB1 and ZEN in 100 vegetable oil samples collected from Tianjin markets were detected by enzyme linked immunosorbent assay (ELISA) and liquid chromatography-mass spectrometry(UPLC-MS/MS). [Results]The detection rate of AFB1 in 100 vegetable oil samples was 23.00%,with the highest concentration of 34.81 μg/kg in peanut oil. The most AFB1 polluted samples were peanut oil and sesame oil,which the detection rate was 36.00% and 28.57% respectively,followed by 25.00% in Walnut oil and 20.00% in olive oil. The detection rate of ZEN was 53.00% with the highest concentration of 384.89 μg/kg detected in rapeseed oil. Except flaxseed oil and tea seed oil,the ZEN pollution was relatively serious in rapeseed oil,corn oil,soybean oil,peanut oil,walnut oil and sesame oil,with the detection rates of 50% or more. The detection rates of AFB1 in the six urban districts were significantly lower than those in the four suburban districts. The AFB1 pollution and concentration in bulk peanut oil were higher than those in barrel peanut oil,while ZEN had no difference. [Conclusion]The oil survey results suggest that fungal toxin contamination in vegetable oil is common in Tianjin. There is a pressing need to speed up the development of detection technology,establish a unified national detection system and strengthen the supervision of bulk oil in farmers' market.
