摘 要:目的为了解郴州市鲜禽畜肉食品的主要风险隐患,分析其可能存在的污染来源,为政府决策及监管提供科学依据。方法2015年-2017年在郴州市辖区内超市和农贸市场随机抽取共175份鲜禽畜肉食品,按照《国家食品污染和有害因素风险监测工作手册》中规定的标准操作程序对样品中微生物及化学污染物进行检验。结果110份鲜禽畜肉样品中29份微生物项目超标,总超标率为26.36%;5种鲜禽畜肉中鲜鸭肉致病菌检出率最高(61.09%);食源性致病菌共检出52株,检出率最高的是沙门菌(35.62%),其次为弯曲菌(23.88%);65份鲜禽畜肉及食用副产品中未检出所监测的禁用药物、有机污染物和兽药。结论郴州市市售鲜禽畜肉食品存在微生物污染风险隐患,建议加大对鲜禽畜肉的监测和监管力度,从源头上避免食源性疾病的暴发流行。Objective To explore the risk factors of fresh poultry and livestock meat and analyze the possible contaminant,so as to provid scientific basis for government .to conduct decision -making and supervision on food safety.Methods A total of 175 fresh poultry and livestock meat samples were randomly collected from supermarkets and farmer markets in Chenzhou from 2015 to 2017 for detecting microorganisms and chemical contaminants in accordance with Manual for'National Food Contamination and Harmful Factors Risk Monitoring.Results Twenty -nine(26.36%)of the 110 positive samples were contaminated by microorganisms;pathogenic microorganisms were detected from 5(61.09%)samples;food borne strains were isolated from 52 samples,and the detection rate of Salmonella was the highest (35.62%),followed by Campylobacter (23.88%);65 samples were negative for specific monitored forbidden drugs,organic pollutants or veterinary drugs.Conclusion There are risks of microbial contamination in fresh poultry and livestock meat in Chenzhou City.It is recommended to increase monitoring and supervision of fresh poultry and livestock meat,so as to avoid the outbreak of food borne diseases.
