摘 要:目的了解苏州市社区居家养老集中供餐现况,探索改善策略,为规范苏州市乃至江苏省社区居家养老集中供餐工作提供科学依据。方法通过实地探访、问卷、访谈等,对40个苏州市社区居家养老集中供餐机构进行现场调查。结果苏州市居家养老集中供餐机构约为200家,运营状况基本良好。各供餐机构提供餐食数量充足但种类较少,可基本满足用餐老年人食物供给。从业人员营养知识问卷平均得分为(28.61±5.62)分,及格率48.4%;不同职业和文化程度从业人员间营养知识得分差异有统计学意义(P<0.05);调查者中有56.4%的从业人员认为有必要接受营养健康教育并认为最佳时长及频率为每月2 h左右;报刊杂志、网络、电视等媒体是从业人员获取营养知识的主要途径。结论应依托政府资金投入和政策支持,充分发掘各种潜在力量,改进居家养老集中供餐机构运营模式。加强从业人员营养健康教育,改善食物供给种类及营养质量,全面发展居家养老集中供餐服务。Objective The study aimed to assess the current situation of the community centralized feeding institutions of home care system in Suzhou,explore the improvement strategy, and provide scientific basis for standardizing the work in Suzhou and Jiangsu. Methods A field survey was conducted at 40 community centralized feeding institutions in Suzhou through field visits, questionnaires and interviews. Results There were about 200 community centralized feeding institutions in Suzhou, and the operation was basically good. The quantity of meals was sufficient to meet the needs of the elderly people.The variety of food was limited, however. The average score of nutrition knowledge of employees was 28.61 ±5.62 and the pass rate was 48.4%. The differences were statistically significant among employees of different occupations and degrees of education(P<0.05). Health education on nutrition knowledge was regarded to be necessary by 56.4% employees and 2 hours per month would be the best choice. Magazines, internet and TV were main sources of information on nutrition. Conclusion To improve the operation mode of centralized feeding institutions of home care system,it is necessary to rely on the government investment and policy support as well as to fully explore various potential forces. To develop the community centralized feeding service comprehensively, the health education on nutrition knowledge among employees was needed to carry out and the nutrition quality of food needs to be improved.
