富硒地区玉米油中硒及脂肪酸含量的测定

摘　　要：以富硒地区产地的玉米种子为原料制备玉米油(毛油),并对玉米油中硒及脂肪酸含量进行了测定。结果表明:富硒地区玉米油硒含量为普通地区玉米油的22倍。通过油脂提取、皂化分离过程所得的相关产物中,玉米粕的含硒量最高,其次是玉米粉,玉米油、脂肪酸、不皂化物的含硒量相近,均远低于玉米粕和玉米粉的含硒量。Crude corn oil was extracted from corn grown in Enshi ,a district rich in selenium of China. The content of selenium in the crude oil was 22 times higher than an usual corn oil. Among the products obtained from the oil extraction and saponification separation,corn oil extration had maxinum selenium content, which is higher than that in corn powder. The selenium content in corn oil, in fatty acid extration and in unsaponifiable is approximately equal, which is much lower than that in the first two products. The fatty acids in corn oil was also analyzed quantitatively.
