摘 要:比较了 5种不同 pH值培养液———pH3 8、5 4、7 0、7 5和 8 0培养液对红曲霉的生长和产生红曲色素的影响。结果表明 :较酸的 pH3 8的培养液利于细胞生物量的增长 ;中性偏酸的pH5 4的培养液适合红曲霉产红曲色素 ;所产红曲色素分胞外色素和胞内色素两种 ,以胞内色素为主。如果拟用红曲霉生产红曲色素 ,pH5The effects of five different pH values of the medium on the growth and the production of monascus pigment of Monascus anka were compared It was found that it was favorable for the growth of Monascus anka when the pH of the medium was 3 8, but unfavorable for the production of monascus pigment By comprehensive analysing,the optimum pH of the medium was pH5 4 The results showed that two kinds of monascus pigment,outcellular pigment and intracellular pigment were formed by Monascus anka ,and the latter was the majority It was suggested that pH5 4 of the medium was favorable in Monascus submerged culture
