摘 要:本次调查中,检测了乌鲁木齐市售白酒52份,结果显示酒中甲醇、杂醇油、氰化物的含量分别为0.005~0.095g/100ml、0.018~0.542g/100ml、0.156~1.338mg/L,以一项以上指标含量超过国家卫生标准为卫生质量不合格,其不合格率为30.8%。提示应当加强对市售白酒卫生质量监测工作。同时本文还提出了降低白酒中这些有害物质的措施。The hygienic conditions of samples of wine are analysed. It shows that the quantities of methyl alcohol, fusel oil and cyanide are 0.005-O.095g/100ml,0.018-0.534g/100ml and 0.159~1.338mg/L respectively. If. one.r more of the quantities mentioned above is over the states hygiene standard, it is thought to be unqualified, the unqualified rate of all the samples is 30.8%. It suggests that we should stress on the surveillance of alcoholic wine obtained from Urumqi markets. In addition, some special methods have been suggested to decrease these harmful substances in alcoholic wine.
