摘　　要：通过感官品评和理化分析的方法,对衡水老白干基酒进行了为期两年的跟踪研究,探讨了衡水老白干基酒不同贮存期在感官和理化指标上的变化规律,并得出了衡水老白干基酒的最佳贮存期以1年为宜。Two-year followup research on the basic liquor of Hengshui Laobaigan Liquor had been done through sensory appraisal and chemiphysical analysis to find the change rules of the sensory and chemiphysical indexes of the basic liquor in different storage peri-ods. And the results suggested that the optimal storage period for the basic liquor was one year.(Tran. by YUE Yang)
