摘 要:在用碱水解玉米麸质粉生产玉米蛋白发泡粉的基础上 ,就玉米蛋白发泡粉得率低 ,纯度低 ,色泽深等问题进行了研究。采用玉米麸质粉入胶体磨细化再用碱水解 ,利用超滤膜分离技术 ,超高温瞬时灭菌 ,真空喷雾干燥等生产新工艺 ,产品蛋白质纯度高达 93% ,玉米蛋白发泡粉得率提高到 83.4 % 。A study was done on the problems such as the relatively low yield, low purity and dark color of the corn-gluten foaming powder produced by means of hydrolyzing corn gluten with alkali. A new technology was adopted, with which corn gluten was ground in a colloid mill, separated through membrane ultrafiltration, sterilized instantaneously in ultra-high temperature and then dried in a vacuum spray dehydrator. The protein purity from the new technology was up to 93%, the yield of corn-gluten foaming powder reached 93%, and much better color was obtained.
