摘 要:选择 1 0~ 2 5月龄的二元和三元杂交肉牛共 1 0头进行分阶段育肥 ,共 1 35 d。第一阶段补予能量饲料 ,第二阶段除补给能量饲料外 ,添加矿质元素和蛋白质饲料 ,其它按传统方法饲养。现场测定 ,屠宰率为 5 5 .43% ,净肉率为 44.77% ,肉骨比为 4.2∶ 1。大理石花纹评定 ,特级占2 0 % ,优一级占 60 % ,优二级占 2 0 % ,均达到优质牛肉标准。3头牛的样品实验室分析 ,嫩度即剪切力值均低于美国规定的 3.62 kg,达到了优质牛肉的标准。臀肉、背最长肌分析 ,富含多种氨基酸。Ten of 10 to 25 months old two way crossbred and three way crossbred beef cattle were finished in two stages of 135 days. The cattle were just supplemented with energy feeds during the first stage and during the second stage, cattle were both supplemented with mineral additive and protein feeds besides energy feeds. After the finishing, cattle were slaughtered, the slaughter percentage, net meat ratio and meat bone ratio were 55.43%, 44.77% and 4.2:1, respectively. Marbling grading showed that percentage of prime, choice and select beef was 20%, 60% and 20%, respectively. Shear value of three cattle measured were lower than that of US quality beef standard(3.62 kg), which reached quality beef standards. In this trails, amino acid contents of beef ware also analyzed.
