摘 要:目的了解越城区食品中铅、镉、汞、砷等重金属元素的污染情况,为食品安全防控提供科学依据。方法按照GB 2762-2012《食品安全国家标准食品中污染物限量》,对2011年-2013年越城区食品安全风险监测数据进行评价。结果蔬菜中铅超标率21.43%,海中甲壳类水产品铅超标率2.22%,镉超标率8.89%,检出总砷含量偏高,均值达0.81mg/kg。结论蔬菜、海中甲壳类水产品等食品中铅、镉等重金属元素有不同程度超标,建议有关部门加强相关食品生产、加工的监管,严厉打击重金属企业违法生产、排污行为,切实完善危废处置措施,全面排查重金属企业及周边区域环境安全隐患,加大对海水中重金属元素的监测力度,确保海水养殖业的生产环境,保障居民食品安全与身体健康。Objective To understand the pollution status of heavy metals such as lead, cadmium, mercury, arsenic in food of Yuecheng district, and provide scientific basis for prevention and control of food safety. Methods According to GB 2762 - 2012 "National food safety standards - pollutants limit in food", the food safety risk monitoring data in Yuecheng district from 2011 to 2013 was evaluated. Results The over - limit rate of lead was 21.43% in vegetables. While in shellfish aquatic prod- ucts from sea, the over-limit rates of lead and cadmium were 2.22% and 8.89% respectively, and the total arsenic content was higher, 0.81 mg/kg. Conclusion The contents of heavy metals, such as lead and cadmium, were over the standard in vegetables and sea shellfish aquatic products to different degree. It was suggested that relevant departments should strengthen su- pervision on production and processing of related food, and punish the enterprises with illegal production or waste disposal. In addition, the hidden security danger of heavy metals in enterprise and the surrounding environment should also be comprehensively checked to protect marine aquaculture production environment, thus ensuring the health and food safety of residents.
