摘  要:以楚雄野生山茶花为原料,在单因素实验基础上利用正交设计优化了超声波辅助提取色素工艺,并研究了该色素的抗氧化性能。结果表明,超声波辅助提取山茶花色素的最佳工艺为:超声时间为40min,液料比为1∶20,超声温度为70℃,超声功为600W;该色素具有较强的抗氧化能力。On the basis of single factor experiment, the ultrasonic - assisted extraction technique ofRed pigment from ChuXiong Camellia japonica residues was optimized by orthogonal design and the antioxi-dant activities of the pigment was determined. The results showed that the optimum extraction conditionsfor grape peel pigment were as follows : ratio of solids to liquid was 1 : 20, extraction temperature was at70℃,and extration time was 40 mi n, ultrasonic power 600W. The determination results suggested thatthe pigment had strong antioxidant activities.
