摘 要:目的了解江西省食品中铅镉污染现状,为开展食品安全评估、制定食品安全标准和采取有针对性的控制措施提供科学依据。方法按2013年江西省食品安全风险监测计划进行采样和检测。结果对5大类1 216件食品进行铅镉监测,铅检出率81.3%,其中干食用菌、婴幼儿配方食品检出率超过96%,2件坚果超过限值标准;镉检出率45.7%,其中干食用菌、蟹检出率超过95%,18件蟹超过限值标准。结论铅镉污染普遍存在,不同类别食品受到的污染情况差异较大,需采取针对性措施;许多类别食品没有镉等重金属的限值标准,建议增加食品安全风险监测的食品类别和检验项目,为制定、修改国家标准提供数据。GB2762-2012中食用菌及制品、甲壳类水产品(蟹)等污染物限值标准不直观,难以判断,有必要修订。Objective To provide scientific basis for assessing food safety,developing food safety standards and taking appropriate control measures through understanding the current contamination status of lead and cadmium in food in Jiangxi province.Methods Sampling and detection of food were carried out according to"Jiangxi provincial program for food safety risk monitoring". Results The concentrations of lead and cadmium were detected in 1 216 food samples of 5 categories. The detection rate of lead was 81. 3%,it was more than 96% in dried edible fungus and infant formula food,and two nuts samples were over the limit standard. While the detection rate of cadmium was 45. 7%,it was more than 95% in dried edible fungus and crab,and 18 crabs samples were over the limit standard. Conclusion The contamination of lead and cadmium is ubiquitous in food,and varied a lot in different types of foods,needing specific measures. Due to the absence of limit standard for heavy metals such as cadmium in many kinds of foods,it was suggested to increase more food safety monitoring projects covering more food categories and test items to provide available data for formulation and revision of national standards. Pollutant limits of edible fungus and its relevant products,as well as crustacean aquatic products(crabs) were not intuitive in GB2762-2012,difficult to judge the pollution level,so it is urgent to revise the standard.
