摘  要:目的了解甘肃省地方特色食品中食源性致病菌的污染状况,为食源性疾病控制提供科学依据。方法各市州每月采集地方特色食品2份~3份,全年共采集地方特色食品439份,依据中华人民共和国国家标准《食品卫生微生物学检验》(GB/T4789)规定的程序和方法检测分离致病菌。结果439份样品中,19份检出食源性致病菌,总检出率为4.33%;平凉市检出率最高(15.15%);发酵类地方特色食品中食源性致病菌的检出率最高,为16.67%;饭店(酒店)样本中污染最为严重(15.38%);各季度间食源性致病菌的检出率差异无统计学意义。结论甘肃省地方特色食品中食源性致病菌污染现状不容乐观,应引起有关部门和消费者的重视。Objective To understand the pollution status of food - borne pathogens in local characteristic food of Gansu prov- ince, and provide scientific evidence for control of foodborne diseases. Methods Two or three local characteristic food samples were collected from each city or prefecture of Gansu province every month. Then the pathogenic bacteria was detected in the 439 local characteristic food samples collected in a year according to the specific procedures and methods of "Microbiological exami- nation of food hygiene" (GB/T4789). Results In the 439 food samples, food - borne pathogenic bacteria was isolated from 19 samples(4.33% ). The highest positive rates were found in Pingliang city( 15.15% ), fermented food( 16.67% ) and hotels ( 15.38% ). The detection rates of food - borne pathogenic bacteria had no significant difference among quarters. Conclusion The current situation of food - borne pathogens pollution is not optimistic in local characteristic food of Gansu province, requiring more attention of the relevant departments and consumers.
