摘 要:目的了解青岛市售商品中各类食品的铝残留状况。方法采集青岛市农贸市场、商店超市、路边小摊、小型餐饮店和网上商店生产或销售的共167份样品,包括焙烤、油炸食品,淀粉及淀粉类食品,水产动物及其制品,藻类及其制品,特殊营养用品,地方特色食品和膨化食品。按GB/T 5009.182-2003《面制食品中铝的测定》方法进行检测,按GB2762-2012《食品中污染物限量》进行评价。结果检测的167份样品中,铝检出率为47.9%,超标率为8.98%,最高检出值为1 119.0 mg/kg。检出率最高的3类食品分别为藻类及其制品、水产动物及其制品和淀粉及淀粉类食品,其检出率和超标率分别为100%、100%、78.9%和100%、85.7%、26.3%,最高值分别为644.4 mg/kg、1 119.0 mg/kg和567.5 mg/kg;特殊营养食品、地方特色食品、膨化食品、焙烤油炸食品铝检出率分别为11.7%、64.0%、64.7%、80%,其超标率都为0,最高检出值为74.6 mg/kg。结论铝残留问题值得关注,尤其是海产品。Objective To investigate the whole aluminum contamination of market in district of Qingdao. Methods A total of 5 representative and different places were selected including wholesale market, pedlars market, supermarket, online shop and foodstuffs store. 167 samples from ? typically food categories were selected randomly. The aluminum content were detected and evaluated according to the GB I"5009. 182 - 2003 and GB 2762 - 2012. Results The detection rate of Aluminum was 47.9% among the 167 samples, and the exceeding rate of aluminum was 8.98% which was higher than the limits, the highest alumi- num content was 1 119.0 mg/kg. The detected rating of algae and its products, aquatic animals and their products, starch and starch products was 100% ,100% ,78.9% ,and the exceeding rate was 100% ,85.7% ,26.3%, the highest aluminum content was 644.4 mg/kg,1 119.0 mg/kg and 567.5 mg/kg. The detected rating was 11.7% ,64.0% ,64.7% and 80% of food of special nutrients, local food, puffed food and baked food, and there was no higher than the limits, the highest aluminum content was 74.6 mg/kg. Conclusion The aluminum contamination was very serious so it needs us to pay more attention especially to the marine products.
