摘　　要：目的了解各部门对食品安全国家标准《灭菌乳》的认知、使用和贯彻实施情况,为标准修订工作提供背景资料和合理化建议。方法调查各类单位183家,采用现场问卷方式进行。结果不同调查对象对标准的知晓情况(χ2=364.000,P<0.01)、使用情况(χ2=645.035,P<0.01)以及培训情况(χ2=280.879,P<0.01)差异均有统计学意义。结论多数调查对象认为标准合理或基本合理,少数认为标准部分内容不合理。Objective To explore the implementation and to evaluate the ratinality of nationanl food safety standards of sterilized milk, provide background information and rational suggestions to revise the standards. Methods To do surveys in 183 institutions, in the form of questionnaire. Results There are statistically significant difference on the knowledge on the standards （X2 = 364.000, P 〈 0.01 ）, usage （X2 = 645.035, P 〈 0.01 ） and the training （X2 = 280.879, P 〈 0.01 ） for different respondents. Conclusions The majority repondents consider the standards are rational or reasonable, a few people think some parts of the standards are not reasonable.
