摘　　要：香蕉抗性淀粉是一种新型膳食纤维,不仅具有抗性淀粉的生理功能作用,而且还保留香蕉本身的功能特性。介绍目前香蕉抗性淀粉的相关制备技术研究现状。Banana resistant starch is one new type of dietary fiber, which not only has the physiological functions of resistantstarch, but also preserves its functional properties. This review summarizes the present knowledge of the preparation of bananaresistant starch.
