摘  要:目的了解罗湖区食用油黄曲霉毒素B1(AFB1)污染状况,掌握辖区居民食用油的AFB1暴露水平,评估食用油中AFB1污染导致人群出现健康危害的风险。方法以分层随机抽样方法采集食用油样品50份,用液质谱联用方法 (LC-MS/MS)检测其中的AFB1含量。结合2008年深圳市居民总膳食调查数据和食用油AFB1含量数据,估计罗湖区居民食用油中AFB1的暴露水平。应用AFB1致肝癌平均危害程度公式对食用油中AFB1对居民可能造成的健康危害进行风险评估。结果食用油中黄曲霉毒素含量平均值为0.79μg/kg,超标率为0.0%。不同场所的食用油中黄曲霉毒素检出率差异无统计学意义(χ2=1.746,P=0.094)。估计膳食暴露摄入量为0.0229μg/d,植物油对于肝癌发病率的贡献为1.489/107人。结论经风险分析发现植物油黄曲霉毒素B1风险较低,总体安全性较好,但是其中花生油黄曲霉毒素含量相对较高,今后应针对花生及其制品进行长期的监测。Objective The study was designed to evaluate aflatoxin B1 (AFB1) intake from cooking oil and the health risks for residents in Luohu district of Shenzhen city, by investigating AFB 1 concentration and the dietary consumption from cooking oil. Methods Fifty cooking oil samples were collected by stratified random sampling methodology and determined by LC-MS/MS. The intake of AFB1 from cooking oil from Luohu district in Shenzhen was estimated from AFB1 concentration through food consumption data from the total diet study performed in 2008. The potential risk for cancer was estimated by a formula established by the joint expert committee on food additives (JECFA) from food and agricultural organization/world health organization (FAO/WHO). Results The average concentration of AFB1 in the cooking oil samples was 0.79 ~ g/kg. None of the samples exceeded the maximum level. There was no statistical difference in various types of sample sites (X2=1.746, P=0.094). The daily intake of AFB1 from cooking oil was found to be 0.0229 p, g and the carcinogenic potency of cooking oil was estimated at 1.489 person/107 persons. Conclusion The risk assessment result suggested that the current dietary intake of AFB 1 from cooking oils in Luohu district has no appreciable effect on health, however, the AFB1 concentrations in peanut oil were relatively high, and the peanut products need to be monitored in the future.
