摘 要:为探索大白杏采后的保鲜方法,有效延长大白杏的保鲜期,本试验以北京大白杏为原料,分别以壳聚糖、魔芋精粉、壳聚糖与魔芋精粉按1∶3配比的复合涂膜剂为涂膜材料,研究了4℃冷藏条件下大白杏的腐烂率、失重率、呼吸强度、Vc含量、可滴定酸含量、可溶性固形物含量和硬度等的变化。结果表明,壳聚糖和壳聚糖∶魔芋精粉=1∶3复合涂膜剂可有效降低大白杏的腐烂率、失重率和呼吸强度,达到延长保鲜期的目的;魔芋精粉和壳聚糖∶魔芋精粉=1∶3复合涂膜剂对抑制可滴定酸含量降低及果实硬度下降有明显的效果。综合各因素考虑,壳聚糖∶魔芋精粉=1∶3复合涂膜剂对大白杏的保鲜效果最优。本研究为延长大白杏的保鲜期、延缓贮藏过程中大白杏品质的降低提供了一定的理论依据。Coating treatments of chitosan,konjac powder and chitosan combined with konjac powder at a ratio of 1 ∶ 3were studied to prolong the shelf-life of ‘Dabai’apricot stored at 4℃. ‘Dabai’apricot were coated with three different coating formulations( chitosan,Konjac powder,and composite). The effect of the coatings on quality of apricot was evaluated by the changes of rot rate,weight loss,respiration rate,vitamin C,titratable acidity,soluble solids content,and firmness. Results showed that coating treatments of chitosan and chitosan combined with konjac powder at a ratio of1: 3 coatings extended the shelf-life of ‘Dabai’apricot as it decreased the rot rate,weight loss and respiration rate significantly. Meanwhile results also indicated that konjac powder and chitosan combined with konjac powder at a ratio of1: 3 coatings suppressed the decrease of soluble solids content and the decline of firmness. The effect of combined coating treatment was better than the two others through a comprehensive evaluation.
