摘 要:鲜切果蔬因方便新鲜、营养丰富而受到消费者推崇,但在加工和贮藏过程中品质极易劣变,同时受到微生物侵染,降低其食用品质并缩短了货架期。脉冲强光是一种冷杀菌技术,具有快速高效、环保节能和无残留等特点。本文简述了脉冲强光技术的杀菌机制和特点,并介绍国内外将其应用于鲜切果蔬杀菌和保持贮藏品质的最新研究进展。Due to the advantages of rich nutrition, convenience and freshness, fresh-cut fruits and vegetables are deeply favored by consumers. However they are easily contaminated by microorganisms during the processing and storage, which depreciates their quality and shelf-life. Pulsed light as a nonthermal sterilization technology possesses the merits of high efficiency, energy-save, environment-friendly and residual-free. This article briefly introduces the disinfection mechanisms and characteristics of pulsed light, meanwhile, the newly progress on the application of pulsed light in preservation and microorganisms control of fresh-cut fruits and vegetables is particularly recommended.
