摘 要:目的:评价酰化茶多酚作为食品抗氧化剂的毒理学安全性。方法:按照我国卫生部《食品安全毒理学评价程序和检验方法规范》的要求进行小鼠急性经口毒性试验与遗传毒性试验(Ames试验、小鼠骨髓细胞微核试验、小鼠精子畸形试验)的毒理学研究。结果:该酰化茶多酚对雄性ICR小鼠的急性经口毒性半致死剂量(LD50)为3.69g/kg,雌性小鼠急性经口LD50为6.81g/kg,根据急性毒性分级标准的规定,该受试物属低毒级;而三项遗传毒性试验结果均为阴性。结论:在本实验条件下,酰化茶多酚的小鼠急性经口毒性属低毒级,未见遗传毒性作用。Objective : To evaluate the toxicological safety of acylated tea polyphenols used as a food antioxidant. Meth- ods : Accordinl; to the national standards of food toxicological assessment issued by Healthy Ministry of PRC, the acute toxicity test, genetic toxicity tests( Ames test, bone marrow cell micronucleus, micronucleus test of polychromatic eryth- rocytes in bone marrow,sperm shape abnormality test)were carried out. Results: The acute toxicity result showed that the median acute oral lethal dose( LD50 ) of acylated tea polyphenols for male ICR rice was 3.69g/kg, and the median a- cute oral lethal dose(LD50) for female rice was 6. 81g/kg. According to the test guideline, acylated tea polyphenols was evaluated as low - toxicity. The results of three genetic toxicity tests were all negative. Conclusion : acylated tea poly- phenols was classified as low - toxic substance and its genetic toxicity was not found.
