摘  要:目的研究鱼类胶原蛋白在包装中的应用进展。方法介绍了作为天然蛋白质的胶原蛋白具有的良好生物相容性、生物降解性、抗原性低等特点,以及作为食品包装材料在制备人造肠衣、胶原膜以及胶囊等方面的应用;简述了国内外对胶原蛋白在包装方面的研究进展,尤其说明了鱼类胶原蛋白的优势及应用。结果我国是渔业大国,鱼类胶原蛋白资源丰富,如果直接作为废弃物丢弃,不仅浪费资源,造成环境污染,而且对企业效益也不利;反之如果能够充分利用,不仅可以增加鱼类加工价值,对保护环境也有利,而且在安全方面没有任何顾虑。结论与哺乳动物胶原蛋白相比,鱼类胶原蛋白具有其独特的优势,将成为人们关注的热点。Objective To study the research progress of fish collagen in the packaging field. Methods It was introduced that the natural protein collagen has good biocompatibility, biodegradability, and low antigenicity, and that it was used as food packaging material in the preparation of artificial casings, collagen membrane, capsules and so on. The research progress of collagen in packaging was outlined, in particular, the advantages and applications of fish collagen were explained. Results Our country is a big fishery country, fish collagen is a rich resource, if it is directly discarded as waste,it would not only waste resources and cause environmental pollution, but would be also detrimental to the business benefits,whereas if it is fully utilized, it can not only increase the value of fish processing, but is also favorable for environmental protection. Besides, there is no concern in terms of security. Conclusion Compared to mammalian collagen, fish collagen has its unique advantages. The study on the application of fish collagen has become the focus of attention.
