摘 要:本文以苹果籽壳为原料,首次研究了天然苹果籽壳色素的提取和光谱学特性,并考察了金属离子、pH值、光照、温度、氧化还原剂以及常用食品添加剂对其稳定性的影响。结果表明,苹果籽壳色素易溶于碱性水溶液,不溶或者难溶于非极性溶剂。紫外-可见光谱分析表明,色素在264 nm处有吸收峰。稳定性试验表明,色素易与二价或者三价金属离子形成沉淀,在偏酸至中性范围内较稳定,对光、热、氧化剂、还原剂以及各种食品添加剂耐受性强。该色素有望开发成为安全可靠的天然植物色素添加剂。The extraction, spectroscopy characteristic of the pigment from apple seed shells were studied for the first time, and the effects of different factors (such as metal ions, pH, light, temperature, oxidants, reducing agents and food additives) on the stability of the pigment were also investigated. The results were as follows: The pigment was soluble in alkaline solution, insoluble or poorly soluble in nonpolar solvents. The UV-visible spectrum analysis revealed that there was an apparent absorption peak near 264 nm. The pigment solution was easily precipited when some divalent and trivalent metal ions were added. In addition, it was suitable for use in acidic and neutral conditions and could be relatively stable for light, temperature, oxidants, reducing agents and some kinds of food additives. Therefore, the pigment from apple seed shells was a kind of safe and reliable natural plant pigment.
