摘　　要：研究了舟山海域产裸五角瓜参(Acaudina molpadioides)中主要营养成分。结果显示,裸五角瓜参蛋白质含量较高,粗蛋白含量达到16.43%(冻)、52.38%(干),其中主要以胶原蛋白为主;体内含有多种维生素,以VE含量最为丰富,达到221.2 mg/kg,其余维生素含量较低;矿物元素种类较多,部分矿物元素如钾钠钙镁铁含量较高,其中铁元素含量显著高于梅花参,是贫血病人的良好补铁食物来源,但铅和砷含量也较高,且超过国家标准;氨基酸评分标准结果表明裸五角瓜参蛋白质质量较低,但由于含有丰富的呈味氨基酸,表明其是一类生产海鲜调味料的良好原料;裸五角瓜参中含有23种脂肪酸,以单不饱和脂肪酸和多不饱和脂肪酸为主,含量分别达到34.92%,30.77%。舟山海域产裸五角瓜参是一种蛋白质、脂肪酸和矿物元素含量丰富的生物资源。The main nutrient components of sea cucumber （Pentacta inornata） were tested and analyzed with routine methods. The results indicated that contents of crude protein of fresh meat and dry meat were 16.43 and 52.38, respectively, which mainly were collagen protein. The content of VE was 221.2 mg/100 g, with a comparatively low content of other vitamins. Moreover, there were abundant trace elements in sea cucumber, such as Ga, Mg, Na, K and Fe. The content of Fe was higher compared with Thelenota ananas. The content of total arsenic and lead were over standard in the meat of material. The result of AAS and CS showed that protein ofPentacta inornata was low, but because abundant amount of some taste amino acid, it was able to be the material for the production of sea sauce. There were 23 fatty acid, which were mainly composed by MUFA （34.92%） and PUFA （30.77%）. In conclusion, sea cucumber （Pentacta inoruata） is valuable marine biology resource with low fat, rich in collagen and trace elements.
